Sharing the following information on how to cook for Thyroid Cancer patients. I hope to increase my knowledge so that I can create some dishes for my friend. Praying for his healing.

THYROID CANCER

Cooking for a Thyroid Cancer Diet. Discover cooking tips for a low-iodine diet, plus how to ease swallowing difficulty during thyroid cancer treatment.

Thyroid cancer treatment may mean following the kind of strict diet that can make preparing meals a challenge. Cooking for the thyroid cancer patient may take some getting used to, but you can create healthy meals to ease the difficult symptoms thyroid cancer sometimes causes.
The trick: altering food selection as well as how foods are prepared.

Planning a Low-Iodine Diet:
Patients undergoing radioactive iodine therapy following surgery for thyroid cancer are usually placed on a strict low-iodine diet — and iodine is in a surprising number of foods.

A low-iodine diet requires avoiding foods like:

  • Iodized salt
  • Dairy foods, including cheese, milk, yogurt, ice cream, and butter
  • Packaged breads and baked goods
  • Chocolate
  • The skins of potatoes
  • Fish and seafood, and other sea products like seaweed and kelp
  • Soybeans and other soy products, lima beans, kidney beans, pinto beans, and other types of beans
  • Egg yolks (the whites are fine to eat)

Relying primarily on fresh foods, particularly meats, fruits, and vegetables, is generally required to minimize iodine intake. A low iodine-diet is really a very healthy diet, full of fresh foods that are low in both fat and calories.

Cooking for the Cancer Patient:
Another common symptom of thyroid cancer treatment is dysphagia, or trouble swallowing. Dysphagia may interfere with adequate food intake and result in weight loss, even before a thyroid cancer diagnosis is made.

People naturally eat less when experiencing a fear of choking during meals,” explains Sharlene Bidini, RD, board-certified specialist in oncology nutrition at the Oakwood Center for Cancer Care in Dearborn, Mich. “Anyone that has difficulty swallowing should avoid coarse, dry foods such as toast, crackers, chips, and pretzels,” says Bidini. “Creamy, soft, moistened foods are usually well tolerated.”

Here are more tips to help prepare easy-to-eat foods for thyroid cancer treatment:

  • Don’t season foods with iodized salt if you’re on a low-iodine diet.
  • Try pureeing your meals if you’re having trouble swallowing food.
  • Prepare smaller meals, but eat more often — frequently throughout the day.
  • Make sure foods are well cooked so that they’re softer and easier to swallow.
  • Choose protein-rich foods to get the calories and energy that you need.
  • Add plenty of fresh fruits and vegetables to the meals you’re preparing; steam or puree vegetables and stew or poach fruits to make them easier to chew and swallow.

Remember that your nutritional needs are unique to you and your cancer care. “Nutrition recommendations should be individualized based on the type of treatment,” says Bidini. Working with a dietitian can help you map out a strategy to enjoy the foods that you need while avoiding those that are problematic during your cancer recovery.

My kitchen is my playground where I give my magic touch to create recipes. It warms my heart to think that somewhere, sometimes, at someone’s dining table my dish is served and someone is enjoying it with their loved ones.

I thank GOD for this special blessing which I can share with others. By the way I am still at my kitchen at this hour creating new recipes for my client. When one has passion in her work there is no such thing as tired!

Created this dessert for a good friend who is a cancer stage 1 patient.

Boiling 1/4 Pineapple chunks with 200g cut Sweet Potatoes pieces in 3 cups water till cooked. Takes about 15 mins on medium heat till Sweet Potatoes become soft. Towards the last minute add in 1 small sachet of 100% Ginger Powder without Sugar. The fresh Pineapple is sweet enough.

Both Pineapple and Sweet Potatoes are good in fibres with antioxidant and Ginger is anti inflamatory.

Praying to God to bless me with wisdom to create more healthy recipes.

Take it slow today. It’s Saturday. My 1st meal of the day at 12 noon.

Toast 2 slices of Pumpkin Raisin Chinese Steamed Bread, spread with Butter and a slice of Cheese. My drink is F & N Nutri Soy milk with Reduced Sugar. Eat mindfully always.

Dinner

Was out the whole Sunday afternoon meeting with friends for nice lunch, attended our friend Tsuyumi Miwa’s Art Exhibition @ Singapore Musical Box Museum, came home to watch Youtube drama and dozed off. Actually took 2 hours nap.

For dinner I did Long Beans, Prawns, Shimeji Mushrooms with MYOJO Tanmen in LONG SHENG Prawn Chilli Sauce. (Click for full recipe)
