Blessed Monday from Singapore. Went to supermarket to stock up some essentials for the week. Saw and bought Red Spinach, some Japanese Shirasu (Mini WhiteBaits) & some Dried Prawns. Made a nutritious Red Spinach Shirasu Soup with some Red Glutinous Rice Wine Lee for my Samurai as a light Lunch before he goes out to meet his friend to catch up.
Preparation:
First, I soak 2 TBS Dried Prawns in half cup hot water while I clean the Red Spinach, divide the stalks from leaves and pluck the stalk one by one to remove the thin layer of membrane.
I also have some Red Glutinous Rice Wine Lee, 2 TBS Japanese Shirasu (Mini WhiteBaits), 1 tsp Sunflower Oil and some Himalayan Pink Salt to taste.
Cooking:
Get ready a pot, heat up with 1 tsp Sunflower Oil, drain away the soaking water from Dried Prawns and drop these into the oil to saute with the Red Glutinuous Rice Wine Lee till fragrant.
After that, add in the Red Spinach Stem and add in 500ml water. Bring to boil for 5 minutes.
Then add in the Red Spinach Leaves and some Himalayan Pink Salt to taste.
Boil for 2 minutes and lastly add in 2 TBS Shirasu (Mini White Baits) just to heat through. Off heat and serve this Red Spinach Shirasu Soup piping hot.
