Stewed Daikon with Salmon Trimmings & Garlic

A good home cooked lunch I made today. Served Jasmine Rice with Stewed Daikon with Salmon Trimmings & Garlic, Steamed Chinese Wax Sausage 腊肠 (also known as Lup Cheong in Cantonese).

Cooking Stewed Daikon with Salmon Trimmings & Garlic,

First I pan fried 400g of Salmon Trimmings in 2 TBS Sunflower Oil till both sides turned golden brown. Add in 2 heads of Garlic with skin peeled off, 2 cups water and 1 Daikon cut to thick round pieces with skin peeled off.

Bring to a rapid boil till liquid becomes half. Add in 1/2 cup YAMASA Brand Konbu Ponzu (Sea kelp Citrus Sauce) and continue to simmer till sauce becomes little. Ready to serve.

To cook Rice:
I use 1 cup Jasmine Fragrant Rice, rinse well and drain well. Fill the electric Rice Cooker with Rice and 1 1/2 cup water, turn on the switch to cook.

To prepare Chinese Wax Sausage:
Next, pour hot water to soak 2 Lup Cheong, soften the “stocking” membrane and remove it. When the switch of the Rice Cooker jumps from “Cook” to “Warm”, put the Chinese Wax Sausage (Lup Cheong) on top of Rice and continue to use the rice cooker “warm” to steam hot for 10 mins. Remove and cut Lup Cheong to diagonal pieces and ready to serve. Our lunch was yummy.

Daikon, Apple & Orange Rind Sweet Dessert

Using my small crock pot to make a dessert. Remove skin from 1 medium size Daikon and cut to thick rounds, cut 1 Fuji Apple to wedges, fill all these into the crock pot. Scatter Orange rind (from one Orange), which I remove the white bitter part and cut to shreds.

Leave it to cook with half cup water for a few hours. Then serve with some Korean Ginger Honey.
