Today Samurai & I will go for our 2nd jab Pfizer at Tanjong Pagar Community Centre at 12.30pm.

Boiling Winter Melon Drink with Honey Dates as it is diuretic. Also eating Fish Porridge with toasted You Tiao 油条 & Spring Onion before we walk over to the Centre. Praying that we do not have any discomfort after our 2nd jab.

Both Samurai and I had the 2nd jab of Pfizer exactly 24 hours ago. Thank you for your prayers. So far so good. We did not feel any discomfort.

Curry flavoured Yong Taufu Au Gratin

Just sending this into my oven to bake. My newly created recipe, an East meets West dish, Yong Taufu 釀豆腐,Barley Grains in Laksa Gravy with Cheese Au Gratin. Excitedly waiting for the result.

Tea Break

Take a break in between work. Made for my Samurai Japanese Taiyaki (Japanese Fish shaped Pancake) with red bean filling and a cup of Vietnamese G7 Coffee as afternoon snack.

I am happy to be his 24 hours butler.

A very famous author in Japan, Mrs Sono Ayako said, “Life is usually beyond your expectation. Even in your best condition do not be overjoyed. Even if you are at your rock bottom line, in order to climb up, you need to strengthen up to face the unexpected situation.”

CATherina Hosoi had the opportunity to spend time with this famous author in the 80s & 90s when she visited Singapore. From her conversation, I learned a lot.

Bitter Gourd, Scallop and Pear Soup

CATherina Hosoi used slow cooker to cook this soup for 3 hours.

Ingredients: some soft pork bones (you can use chicken too), 1 big Bittergourd (remove seeds, use some salt to rub the inner part of bittergourd, cut to thick pieces), 3 dried Scallop, 20 Cherry Tomatoes, 1 Korean Pear (remove skin & diced), 12 dried Red Dates (remove stones).

Method:
(1) Use a small pot of water, put in soft pork bones, bring to a boil, wait for 5 minutes & rinse away the scum.

(2)Transfer soft pork bones to a slow cooker with all the other ingredients. Pour into hot water about 10 cups. On the slow cooker.

(3)When 3 hours is up, off heat, add in Salt to taste & ready to serve.

Benefits of this soup:
Bittergourd will help to clear the toxin from your body, Cherry Tomatoes are good in Licopene, Pear is especially good during hot days as it is cooling & quenches thirst, Red Dates is good to give us “qi” and Dried Scallops enhances the good taste in the soup, Meat is good for protein.

Vaccination

It’s been 72 hours since we had our 2nd jab of Pfizer. We had no discomfort at all the past few days. Thank you for God’s blessings.

A little reminder for those going for your vaccination. Please eat something before you go to the vaccination centre, drink water before and after the jab. Also boil some Winter Melon drink or Bittergourd soup or have some Water Melon as they are diuretic.

Using my Electric Pressure Cooker to braise Pork Front Leg in Sesame Oil with Oyster Sauce, 1 cup of Hua Teow Wine, Dark Soya Sauce, Sugar, Ginger, Garlic, Onions and Red Chillies. Craving for this dish for weeks.

I love the collagen. Waiting patiently.

My pressure cooked Pork Front Leg is soft and ready. Can served with boiled Mee Suah together with the soupy gravy with some chopped Spring Onion and Coriander Leaves.

This is one of my all time favourite dishes.
