Power Up 2 minutes Lunch
My Power Up 2 minutes Cooking as my simple nutritious lunch. We get very crunchy freshly made Fish Cakes from the Chinatown Wet Market in Singapore.
They are made with Fresh Grounded Fish Paste added with seasonings andn deep fried to pieces, thus the name Fish Cakes. I cut 2 round Fish Cakes to slices, rinse and drain1 bag of 300g Fresh Beansprouts, rinse 1 big bundle of Fresh Corriander Leaves with stalks andn cut to shorter length.
Heat up 1 TBS Organic Coconut Oil, pan fry the Fish Cakes till thoroughly heated through, add in Beansprouts and Fresh Coriander, add in Himalayan Pink Salt to taste, finally drizzle in 1 tsp Lee Kum Kee Brand Light Soya Sauce.
My 2 Mins cooking is completed. I enjoy eating vegetables. No carbo needed this lunch time as I have low mobility for the first half day and I have planned a very nice 3pm Snack later on. Eat Happy Live Healthy.

One Pot Flavourful Rice
Smart Cooking for Busy People by CATherina Hosoi. I called this One Pot Flavourful Rice.
Ingredients for 5 servings:
(A): Rinse 1 1/2cups rice in a colander. Leave aside for 15mins to drain dry. Fill electric rice cooker with 1 1/4cups water, add 1/2tsp salt and stir to dissolve. Place the drained rice in. Grate 1 carrot and spread over the uncooked rice.
(B): deseed 2 Red Chillies and cut to short pieces. Cut few leaves of Cabbage to bite sized. Cut 1 Leek to round pieces. Remove heads and black veins from 15 Prawns, season with 1/2tsp Salt and a dash of Pepper.
Heat up 1/2TBS oil in a non stick fry pan. Saute Leek and Red Chillies till fragrant. Add in Cabbage, 1 tsp Chicken Granule and toss well. Open a hole in the centre of the veggies and heat up the prawns till colour changes. Add in 2 TBS Hua Teow Wine and toss well. Off fire.
(C): transfer (B) Veggies and Prawns and place on top of the uncooked Carrot layer. Now turn on the switch of the rice cooker to cook the rice till done. Before serving, toss the rice with a pair of chopsticks and sprinkle a little pepper over. Enjoy eating. If you like this dish please share this recipe with your friends.

Breakfast
On a cool raining day in Singapore, I often make this heart warming Chawan Mushi steamed hot custard.
I made use of the Nutri Soy Milk which comes with Oats and Quinoa (reduced sugar version) 1/2 cup, 1 sachet of Aojiru Collagen (Japan manufactured Green Juice Collagen in powder form) and 1 Egg to make a Chawan Mushi.
Towards the last 1 minute of steaming I added in 1 tsp of Red Glutinous Red Wine Lees to heat up as a Heart shape. Then I pair up with a small cup of hot drink made from Yuzu Marmarlade.
This set of Chawan Mushi warms up my body. I spent 8 mins to make this set which I enjoy thoroughly. Beautiful and nutritious.

Bible Sharing
John 8:12 NIV
When Jesus spoke again to the people, he said, “I am the light of the world. Whoever follows me will never walk in darkness, but will have the light of life.”
Lunch
My Assistant was at Tiong Bahru Hawker Centre above the Wet Market. She tapao for me my favourite Lor Mee without Mee but with all Deep fried Wantons and Beansporout and chopped Chinese Celery. Added more Black Vinegar to get the kick. The packed lunch costs S$4.30 including the plastic box. Yummy.
