Red Bean Sweet Soup with Nutmeg Shreds
Bring out my electric pressure cooker to pressure cook 1 cup Red Beans with 7 cups Water, 1/3 cup Dried Longan (龙眼干) which I bought from Xiamen 夏门 some time ago and the few pieces of Orange Rind which I saved in the freezer with the white part removed. A little Rock Sugar can be added if you prefer the dessert to be sweeter. My dessert will be ready in 30 minutes time. No need to presoak the red beans. I added some Nutmeg Shred as garnishing to this Red Bean Sweet Soup.
Enjoying my pressure cooked Red Bean, Dried Longan, Orange Rind and Sweet Nutmeg Shreds Sweet Soup. My Samurai loves it sweeter so he added in some Honey. Have you thought of adding some sweet Nutmeg Shreds as garnishing to this piping hot red bean sweet soup. It tastes so good.

Red Bean Soup with Thai Riceberry
Recipe Sharing Time. I made this wholesome Red Bean Sweet Soup with Thai Riceberry, Barley and Fresh Orange Peel as one of my EH.LH Eat Happy Live Healthy dishes.
First, rinse 1/2 cup Red Beans (without having to soak the beans), 1/4 cup Thai RiceBerry and 1/4 cup Ayam Brand Barley. Scrape white bitter part from 1 fresh Orange peels and cut to smaller pieces.
Transfer all to an electric pressure cooker, fill in 8 cups water and whole pressure cook for 40 minutes. Release pressure before open the lid. To serve this piping hot by adding in some Honey to taste. The Red Beans are very soft and stay. Yummy.

Red Bean Sweet Soup with Mixed Candied Dried Fruits
I am making a variation of the Red Bean Sweet Soup Dessert. This time instead of adding in 陈皮 Chen Pi the dried Tangerine Peel, I add in a handful of mixed candied Dried Fruits (纵合干水果) like Cranberries, Strawberries, Blueberries and Dried Candied Winter Melons.
First boil 1/2 cup of Azuki Red Beans in 10 cups water till the grains split up. To do this, you have to bring it to a rapid boil first then lower down the fire to simmer boil till Red Bean Grains split up.
Then add in the mixed candied Dried Fruits to boil for another 10 minutes to release the fragrance and tastes. A little Rock Sugar can be added to adjust the sweet taste. Please do follow my recipe to cook for your loved ones.

Red Bean Soup with Dried Longan
I know my Samurai is craving for Sweet Dessert. Took out my Electric Pressure Cooker, rinse half cup Red Bean, pour into the pressure cooker and fill with 1,000ml Water and set for 40 mins.
When time is up, release the pressure completely then open the lid, add in 80g Dried Longan (龙眼干) and Rock Sugar to taste. Heat up till Rock Sugar is melted. So easy as that. Need not soak the Red Beans. He is enjoying now.
