I am sharing on how I cook four different type of Sweet Soup Dessert recently
1. Red Azuki Beans with Fresh Orange Rind & Snow Fungus Sweet Dessert
2. Black and White Glutinous Rice Dessert
3. Red Bean Thai Riceberry Dried Logan Sweet Dessert
4. Sweet Potato, Dried Cherry Tomato, Dried Longan Sweet Dessert
Red Azuki Beans with Fresh Orange Rind & Snow Fungus Sweet Dessert
From my kitchen in Singapore showing all readers here how I cook Red Azuki Beans with Fresh Orange Rind, Snow Fungus (you may like to google and read about the many benefits of this item besides being high in collagen) in Sweet Dessert. We Asian like Sweet Dessert Soup to be served as an afternoon Tea item.
For ingredients, I have 1/2 cup Red Azuki Beans, 1 head of Dried Snow Fungus which I soak in tap water for 15 mins, then cut away the hard stems and tear into smaller florets.
Also, I have some Fresh Orange rind from 1 Orange which I cut away the bitter White Part and some Rock Sugar to taste (or you can use any Sugar to taste)
I first rinse the Red Beans (no need to soak), fill up my Electric Glass Cooker with 2,000ml Water and put in Red Beans and Orange Rind.
Set the timer and bring to boil over high for 30 mins. Then add in the Snow Fungus florets and top up with some hot boiling water to reach 2,000ml and again set timer to boil over high for another 30mins.
Then add Rock Sugar to taste and continue boiling under low temperature for 15 mins.
Off heat and ready to serve. The Azuki Beans are soft, the dessert is fragrant with fresh orange aroma. Serve piping hot.

Black and White Glutinous Rice Dessert
Sharing on my newly created recipe: Black and White Glutinous Rice Dessert cooked with Split Bean (Tau Suan in Hokkien) and Dried Longan 龙眼干.
Here is how I do it. 1 have 1/4 cup each Black and White Glutinous Rice, 1/4 cup Split Mung Beans without Skin and half cup Dried Longan. I also have some Rock Sugar to taste (or you can use any Sugar to taste) and some Coconut Cream.
I am using my Electric Glass Cooker to boil together all ingredients with 2,000ml water till all become soft. I set the timer for 40 mins. Add Rock Sugar or any Sugar to taste. Serve this with some thick Coconut Cream.
We both enjoy this Black and White Glutinous Sweet Rice Dessert. This tastes better than the usual “Bubur Hitam” Black Glutinous Rice Dessert.

Red Bean Thai Riceberry Dried Logan Sweet Dessert
Let me share with you this Dessert which I cooked. It is high in antioxidant, protein, iron, Vitamin C and Fibres. I rinse half cup Azuki Red Beans, half cup Thai RiceBerry, half cup Dried Cherry Tomaoes and half cup Dried Longan.
Put all in an Electric Pressure Cooker with 7 cups water and set the timer to 35 mins
When time is up, stir in Crystal Rock Sugar or any Sugar to taste,
Lastly add in a box (200ml) Coconut Cream to heat through.
A yummy nutritious Red Bean Thai Riceberry Dried Logan Sweet Dessert is ready to serve to 4.

Sweet Potato, Dried Cherry Tomato, Dried Longan Sweet Dessert
Using my Electric Glass Multi Cooker, I am boiling Sweet Potato, Dried Cherry Tomato, Dried Longan Sweet Dessert. Decide not to add Sugar to it as Dried Longan is sweet enough. But there is nothing wrong to add some Sugar if you prefer sweeter.
I am using 3 medium Australian Sweet Potatoes, half cup Dried Cherry Tomatoes, half cup Dried Longan with 2 Litres water to boil.
When it is boiling rapidly lower down the heat and simmer boil for 30 mins.
Off heat and serve piping hot. The kitchen smells so aromatic now. Waiting patiently.
