Mung Bean Detox Porridge

My fragrant Mung Beans, Rice, Choy Kon 菜干 (preserved Dried Veggie), Meat (use Pork or Chicken), Honey Dates and Ginger Porridge is here for my loved ones to enjoy. Eat this after Chinese New Year to detox the body from eating too much during the Festive Period.

Preparation & Cooking:

1/3 cup Dried Mung Beans, 1/2 cup rice
1/3 cup Dried Mung Beans, 1/2 cup rice

This is how I do it. First I rinse 1/3 cup Dried Mung Beans, 1/2 cup rice and drain dry.

I have 200g Choy Kon (Dried Preserved Veggie) 菜干 presoaked in tap water for 1 hour. Than need to have several changes of water to remove fine sand. After that, use scissors to snip the Veggie short.

Also, cut 1 thumb sized Ginger to slices and rinse 2 Honey Dates.

Put all ingredients and 8 Cups water into the electric pressure cooker

Fill an Electric Pressure Cooker with Mung Beans, Rice and 8 cups water. Drop in 500g Pork Hock Sections (or Chicken), Ginger slices, 2 Honey Dates and the snipped Choy Kon.

Secure lid tightly and set Electric Pressure Cooker to 40 mins to cook.

When ready, release pressure completely, open the lid and add in Himalayan Pink Salt to taste with a few dashes Pepper.

Ready to serve piping hot. This porridge is so fragrant and good to detox our body.
