Hello everyone, Happy blessed Wednesday. Today cooking three item for complete lunch set: “3 Kinds Rice”, a Pork Rib Watermelon Red Dates Soup and Teppanyaki Teriyaki Pork Belly with Red Capsicum.

“3 Kinds Rice”

3 "Kinds" Rice

To cook the “3 Kinds Rice” I rinse half cup Brown Rice, half cup Thai Rice berry Rice and 1 cup Japanese Short Grain Rice. Drain dry and cook in the electric rice cooker with 2 1/2 cups water. It takes 30 mins to get the rice cooked.

Adding pork rib to soup
Adding red dates to soup

For making this Pork Rib Watermelon Red Dates soup, I boiled 500g Pork Ribs, 300g Watermelon White part from the Rind and 8 Red Dates in 1.5 Liter water till rapidly boiling. After that, lower down the heat and continue simmering for 45 mins.

Lastly, add in some Himalayan Pink Salt to taste. Off fire and serve hot.

Teppanyaki Teriyaki Pork Belly

Teppanyaki Teriyaki Pork Belly

For this Teppanyaki Teriyaki Pork Belly, I used store bought Teriyaki Sauce and Mirin (sweetened Sake) to marinate the thinly slices of Belly Pork for 15 minutes. Meanwhile, I cut 1 Red Capsicum to thick strips.

To cook the Teppanyaki Teriyaki Pork Belly, heat up an electric Hot Pan, drop in 1 TBS Butter and place the Pork Belly in, turning over when Pork changes color. Then add in Red Capsicum to toss with till Pork is all cooked.

Ready to serve with the ‘3 Kinds Rice’ and Pork Rib Watermelon Red Dates Soup as a complete Lunch set. Yummy.
