Happy Easter to all readers. From my kitchen in Singapore let me present to you my special dish for 2020 Easter, a Macao Portuguese influenced dish, Cheesy Potato Curry Flavoured Creamy Chicken.
Ingredients for this recipe: I have half a Chicken which I cut to pieces, 4 big Potatoes, 3 big Onions (I have a combination of Bombay Onion and Yellow Onion from my limited ration of stock), 1 big Red Capsicum, (also known as Red Pepper).
I also have some Meat Curry Powder, 1/2 cup Evaporated Milk and some Mozzarella Cheese.
First season Chicken pieces with 1 tsp Salt, 1 tsp Sugar, a dash of Pepper, 1 TBS Mirin (sweetened Rice Wine), 3 TBS Cornstarch.
Next, cut Potatoes to thick slices and microwave for 5 mins.
Lastly cut Onions to wedges and cut Red Capsicums to big dices.
First melt 2 TBS Butter in a non stick pan, saute Onions till fragrant.
Next add in Chicken and saute till Chicken changes colour.
Than add in 1 TBS heapful of Meat Curry Powder, toss well and pour in half cup of Evaporated Milk. After that, add in the microwaved Potatoes, cover with lid and boil for 5 mins.
Open lid and adjust by adding Salt and Sugar to taste, toss well to prevent the base sticking to the pan. Lastly add in Red Capsicum and sprinkle Mozzarella Cheese on top just heat through.
Off heat and transfer to a beautiful dish to serve. I choose a Heart shape dish for this special occasion. How about you? Do try this recipe at home for your loved ones.
